| After each step of ji application (somijitsuke, ippenjitsuke, nihenjitsuke, sanpenjitsuke), the bowl is dried and the surface is polished. Polishing the bowl has two functions: first, the shape of the bowl can be adjusted, and second, this makes the next coating stick to the surface better. In particular, the polishing after the third application (sanpenjitsuke) is the most important. Careful and thorough use of a whetstone, called a "jitogi," is important here. |
