After each step of ji application (somijitsuke, ippenjitsuke, nihenjitsuke, sanpenjitsuke), the bowl is dried and the surface is polished. Polishing the bowl has two functions: first, the shape of the bowl can be adjusted, and second, this makes the next coating stick to the surface better. In particular, the polishing after the third application (sanpenjitsuke) is the most important. Careful and thorough use of a whetstone, called a "jitogi," is important here.

After the somiji is dry, the bowl is polished with a rough whetstone.

After the ippenji is dry, the whole surface is lightly polished with a whetstone.

After the nihenji is dry, the surface is planed off to make it flat and smooth.

After the sanpenji is fully dry, the bowl is polished with a whetstone and water. This will smooth the surface and edges, creating a perfect shape.
