After two years, the blowfish ovaries pickled in rice bran are ready. The barrels are turned upside down and a mountain of gold-colored rice bran is dumped out. The ovaries piled up inside the bran are gently dug out one by one. After slow fermentation, they are now a tortoiseshell color. At this stage, the amount of tetrodotoxin is down to five to ten mouse units.
