About one year after pickling in rice bran, the upper and lower barrels are switched. The purpose of this is to weigh the barrels evenly. Moving one heavy barrel at a time is hard work. The rice-bran pickles age slowly in the storeroom. In winter, when temperatures are low, microorganisms take a break from their activity. From spring to summer, they become active again, and the fermentation process speeds up. After a year, the surface of the wooden barrels, which was clean to begin with, starts to become coated with salt that has seeped out. In the second year of pickling, the surface of the barrel turns red. This is said to be due to carotenoid, which is present in microorganisms that are resistant to salt.
