Every day during the two years of pickling in rice bran, sauce is poured into the side of the barrels, where the rope is wound around the rim of the barrel. Many producers first filter, and then dilute this sauce, which is fermented liquid from sardines pickled in salt (a kind of fish sauce). It adds moisture to the ovaries and rice bran, helping the fermentation process and adding flavor.
