First, sifted rice bran is prepared in a large box. Then the drained ovaries are put in and coated with more rice bran. The process of spreading rice bran in a wooden barrel, laying ovaries on top, and layering rice bran and rice malt is repeated several times. The rice malt acts as a starter for fermentation. When the barrel is full of ovaries, a straw rope is wound around the rim of the barrel once and buried in the rice bran, and the barrel is closed with a wooden lid. The barrels are piled three high, a heavy rock is placed on top, and they are kept in a storeroom for two years.
