The ovaries are pickled in salt for about one year. They lose their moisture and become firm. While they had filled the barrel up to the rim one year ago, they now have a smaller volume because of the loss of moisture. At this stage the amount of poison in the ovaries has been reduced to about 20% of what it was—about 30 mouse units. The ovaries are removed from the barrel and rinsed with water. The time has come for pickling them in rice bran.
