Blowfish milt is known as a delicacy, but the ovaries are so-called lumps of poison. They contain so much tetrodotoxin that if they are eaten as they are, just one can kill five or six people. The first step in getting rid of the poison so that people can eat them without fear is pickling in salt. Ovaries are laid side by side in a barrel and covered with salt, and the process is repeated, so that there are several alternating layers. Thus the ovaries are buried in salt to start with.

After several months, water accumulates in the barrel with the salted ovaries. This water, which is tinged with red, is formed by tetrodotoxin.
