From mid-May to the end of June, spottyback blowfish migrate to the waters off the Japan Sea coast. It is the ovaries of these blowfish that are used to make “blowfish ovaries pickled in rice bran”. One fish at a time, the belly is carefully slit open, and the ovaries and milt, as well as other innards, are removed.
